You can give notice while on holiday, just send the letter by recorded
delivery to the registered office and / or the place of business in your
contract.
Many years ago, when I left a company and tried to take a fortnight's leave
to the end of the notice period, they took the view that you couldn't earn
leave entitlement whilst on holiday, so I lost one day's pay out of what I
was expecting. Could have argued, but not worth the hassle.
