Sure - anyone can found a company.

I presume your EADs are based on a pending I-485 application. If that is the
case, then yes, you can work for any company, including your own. However,
from the moment you do so, your status will no longer be H-1B, but that of
an Applicant to Adjust to Permanent Resident Status.
