If they want to file a GC for you, they don't even have to hire you. They would
have to hire you once the GC is approved.
But, once an I-140 is filed, you can pretty much not leave the country (you can
leave, but you won't be allowed back on F1.) And that's usually a pretty serious
problem of PhD students, since it means that you wouldn't be able to travel to
conferences outside the US.
I suggest that you schedule a consultation with a good immigration lawyer.
